Ingredients

Add cherimoya, peeled and diced to shopping list 1/2 cup cherimoya, peeled and diced

Add strawberry papayas, peeled and diced to shopping list 1/2 cup strawberry papayas, peeled and diced

Add mango, peeled and diced to shopping list 1/2 cup mango, peeled and diced

Add South African baby pineapples, diced to shopping list 1/2 cup South African baby pineapples, diced

Add starfruit, diced to shopping list 1/2 cup starfruit, diced

Add red onion, diced to shopping list 1 cup red onion, diced

Add Thai red chile, seeded and diced to shopping list 1 Thai red chile, seeded and diced

Add Hatch chiles, seeded and diced to shopping list 2 Hatch chiles, seeded and diced

Add fresh cilantro, chopped to shopping list 1/2 cup fresh cilantro, chopped

Add jicama, diced to shopping list 1/2 cup jicama, diced

Add valencia oranges, juiced to shopping list 2 valencia oranges, juiced

Add key limes, juiced to shopping list 6 key limes, juiced

Add Salt and pepper to taste to shopping list Salt and pepper to taste

Directions:

In a large mixing bowl, combine all ingredients. Gently stir and refrigerate until ready to use. Should be used the same day it is made.

This is a favorite as a garnish for crab cakes or a nice white fish fillet.
