Amaretto Cookies

Yield: Makes 4 dozen

Ingredients

Add egg whites ( 3 eggs ) to shopping list 1/2 cup egg whites ( 3 eggs )

Add sugar to shopping list 1-1/4 cup sugar

Add salt to shopping list 1/4 teaspoon salt

Add Amaretto liqueur to shopping list 1/3 cup Amaretto liqueur

Add flaked coconut to shopping list 3-1/4 ounces flaked coconut

Add almonds, finely chopped to shopping list 4 ounces almonds, finely chopped

Directions:

Beat egg whites until stiff. Then gradually beat in sugar, one tablespoon at a time, until stiff and glossy. Add salt. Gradually beat in Amaretto. Fold in coconut and almonds. Foil-line cookie sheets. Drop mixture by heaping teaspoons onto foil.

Bake at 325 F. for 20 minutes. Cool cookies on foil. Store in air-tight container.
