Irish Coffee with Vanilla

An extra-rich, extra-special after-dinner beverage

Yield: 4 servings (3/4 cup each)

Ingredients

Add chilled whipping cream to shopping list 1 cup chilled whipping cream

Add confectioners' sugar to shopping list 1/4 cup confectioners' sugar

Add vanilla to shopping list 1 teaspoon vanilla

Add to shopping list

Add (1/2 cup) Irish whiskey or brandy to shopping list 4 ounces (1/2 cup) Irish whiskey or brandy

Add granulated sugar to shopping list 4 to 8 teaspoons granulated sugar

Add fresh strong coffee to shopping list 3 cups fresh strong coffee

Directions:

In chilled bowl, beat cream, confectioners' sugar and vanilla until stiff. Refrigerate. Heat mugs by rinsing with boiling water; drain. Add 1 ounce (2 tablespoons) whiskey and 1 to 2 teaspoons granulated sugar to each mug; stir. Pour hot coffee into each mug. Top with the whipped cream. Serve immediately.
